Vegetable Tofu Scramble



Servings: 4
Ingredients and Quantity
  • Salt, to taste
  • 2 tbsp. chopped basil
  • 3 cups chopped firm tofu
  • 2 pieces diced peppers (red, bell)
  • 1 tbsp. olive oil
  • Turmeric, to taste
  • 2 cups chopped cherry tomatoes
  • 2 chopped onions
  • Cayenne pepper, to taste
  • Basil leaves, for garnishing
Direction

  1. Place a greased skillet on medium and warm the pan. 
  2. Put on bell peppers together with onions, prepare for five minutes. 
  3. Put in tofu, cayenne, salt, and turmeric.
  4. Cook an additional eight minutes. 
  5. Garnish with basil. Serve and enjoy!
