Ingredients:
- 3 cups carrots, sliced paper thin rounds
 - 2 tablespoons olive oil
 - 2 teaspoons ground cumin
 - ½ teaspoon smoked paprika
 - Pinch of sunflower seeds
 
How To:
- Pre-heat your oven to 400 degrees F.
 - Slice carrot into paper thin shaped coins using a peeler.
 - Place slices in a bowl and toss with oil and spices.
 - Lay out the slices on a parchment paper, lined baking sheet in a single layer.
 - Sprinkle sunflower seeds.
 - Transfer to oven and bake for 8-10 minutes.
 - Remove and serve.
